I am here to share with you all my favorite easy breakfast recipes which are healthy and easy to make.

UPMA varities

1) Sooji Upma

Preparation time: 15 minutes

Ingredients: Sooji: 1 cup

Onion: 1/2 medium chopped

Tomato: 1/2 medium chopped

Peas: 1/2 small katori

Green chilly-1

Chana dal, urad dal, Mustard seeds: 1 tsp each

Oil and salt -as per requirement

Hing- 1 pinch

Water- 2 cups

Procedure: Take a pan and dry roast Sooji and keep it aside to cool after that. Now take a pan, add some oil to it and put mustard seeds. Let it pop, then add chana dal, urad dal, hing to it and let turn brown and add green chilly (Chooped), onion to it. Let onion cook well and change colour. Now add tomato and peas. and stir well. Add salt to it and let it cook for 2 minutes. Add 2 cups of water and let it boil. Now simmer the gas and slowly, with constant stir add Sooji and let it cook for 5 minutes.

Tastes good with cocnut chutney, sambhar, mint-coriander chutney.

2) Savaiyaan upma

Preparation time: 10 minutes

Ingredients: Sevaiyan: 1 cup

Green chilly-1

Chana dal, urad dal, Mustard seeds: 1 tsp each

Oil and salt -as per requirement

Lemon- 1/2 ( juice)

Hing- 1 pinch

Water- 2 cups

Procedure: Take a pan and dry roast Sevaiyan and keep it aside to cool after that. Now take a pan, add some oil to it and put mustard seeds. Let it pop, then add chana dal, urad dal, hing to it and let turn brown and add green chilly (Chooped), onion to it.  Add 2 cups of water and let it boil. Now simmer the gas and slowly, with constant stir add Sevaiyan and let it cook for 5 minutes. After it cools down, add lemon juice and eat it.

3) Dahi-rice flour upma

Preparation time: 20 minutes

Ingredients: Rice flour- 1/2 cup

Chaach/curd- 1/2 cup

Chana dal, urad dal, Jeera, mustard seeds: 1 tsp each

Red chilly- 2

Hing- 1 pinch

Oil and salt -as per requirement

Procedure: Take a bowl, add rice flour to it and add hing, Jeera and salt. Mix them well. Now add curd/ chaach to it and mix very well like a roti dough.  Take a pan, add oil to it and add mustard seeds to it. Let it pop and then add chana dal, urad dal, red chilly, hing to it. Now add the dough to it and mix very well. Let it cook and become crisp for about 10 minutes with lid. After it cooks well, open the lid and let it become crisp for 5 minutes.

It tastes good with tomato chutney and mango pickle.

4) Sabudana Upma- variety 1

Preparation time: Soaking sabudana (45 minutes), cooking- 15 minutes

Ingredients: Sabudana- 1/2 cup

Capsicum- 1 small

Green chilly- 1

Til seeds- 1/2 tsp

Peanuts: 1 tsp

Oil and salt as per requirement

Procedure: Soak Sabudana for 45 minutes. Take a pan and add some oil to it. Add peanuts, green chilly, capsicum (chopped to it) and saute well. Let this cook well for 10 minutes. Add sabudana, mix well and let it cook for 5 minutes with lid.

This tastes best with lemon juice added from top. If you do not want to add lemon juice, you can eat it as it is also.

5) Sabudana Upma- variety 1

Preparation time: Soaking sabudana (45 minutes), cooking- 15 minutes

Ingredients: Sabudana- 1/2 cup

Potato- 1 small

Black peppers- 4-5 pieces

Peanuts: 1 tsp

Oil and salt as per requirement

Pre-cooking: Boil potatoes and soak Sabudana for 45 minutes.

Procedure: Take a pan and add some oil to it. Add Potato, black pepper (crushed), peanuts and saute well. Let this cook well for 10 minutes. Add sabudana, mix well and let it cook for 5 minutes with lid.

6) Dalia Upma

Preparation time– 20 minutes

Ingredients: Broken wheat/ dalia- 1 cup

Vegetables of your choice ( capsisum, onion, tomato, peas, potato, even soya chunks and panner)

Oil, salt and spices – as per taste

water- 2 cups

Procedure: Take a pan and dry roast broken wheat/ dalia. You can also get roasted dalia from the market. After that, take a pan, pour some oil and add vegetables to it. Add all the spices and salt and let these vegetables cook very well. Add 2 cups of water after that and let it boil. Simmer the gas and add dalia it. Cook until it is well made and is ready to eat.

7) Poha

Preparation time: 15 minutes

Ingredients: Rice flakes: 1 cup

Peanuts- 1 tsp

onion- 1 small

Tomato- 1 small

coriander leaves- Few leaves

soya chunks/ paneer- If you like you can add, else it is okay.

Oil, salt – as per requirement

turmeric powder, red chilly powder- 1 tsp each

Pre-cooking preparations: Take Poha and wash it in drinking water, drain out in a strainer and keep it aside. If using soya chinks, boil water and soak them in it until they are swollen & soft.

Procedure: In meantime, take a pan, add oil and put peanuts, onion, tomato in it. Add masalas to it and let it cook well. Add soya chunks/ paneer to it if youwish to add, else fine. After everything is cooked well, add poha to it and mix well. Let it cook for 5 more minutes. For garnishing, add coriander leaves on top of it.

Tastes very good with some bhujia and coriander leaves.

Idlis

1) Rava Idli

Preparation time: 1 hour

Ingredients: Sooji- 1 cup

Curd- 1 cup

Chana dal, urad dal, hing, Mustard seeds- for garnishing

Salt,oil- 1 tsp

Green chilly- 1

Carrot grated- 1 medium

Procedure: Take a pan and dry saute Rava till it turns pale brown colour. Let it cool. Now take a bowl, add rava, curd, salt to it and mix well till it turns into a consistency of a batter. Now in a small pan, pour some oil and let mustard seeds pop. Add dals, grated carrot and chilly ( chopped) to it and let it turn brown. Now add it to the batter. Let the batter ferment for 30 minutes.

After that take idli plates, pour required quantity and steam cook the it. Serve with coconut chutney for better taste.

Let the batter ferment for 30 minutes.

3) Oats Idli

Preparation time- 30 minutes

Ingredients: Oats- 1/2 cup

Sooji- 1/2 cup

Curd- 1 cup

Chana dal, urad dal, hing, Mustard seeds- for garnishing

Salt, oil- 1 tsp

Green chilly- 1

Carrot- 1 medium( grated)

Capsicum- 1 medium ( chopped)

Procedure: Dry saute both sooji and oats. Keep it aside and let it cool. Take a bowl, add sooji, oats, salt to it and mix well. Now add vegetables to it and mix well. Take a small pan, add oil and pop mustard seeds. Add dals and green chilly to it and let it turn brown and ad dthis to your batter.

After 30 minutes of fermentation, take idli plates and pour required quantity. Let it cook well and then serve with coriander chutney for better taste.

 

Dosas and Cheelas

1) Atta dosa

Preparation time: 30 minutes

Ingredients: Multigrain atta- 1 cup

Sooji- 1/2 cup

Curd- 1 cup

Hing, green chilly, mustard seeds- for garnishing

Salt, oil- as per requirement

Procedure: Take a bowl, add multigrain atta, sooji, salt, curd to it and mix well and make sure the consistency is quite thin. Now take a pan, add some oil and pop mustard seeds. Add hing, green chillies to it and mix these with the batter. Let it ferment for 30 minutes. Now take a non stick pan and grease it well. Let it heat well. Now pour the batter into the shape of Dosa. Let it cook from both the sides. Tastes best with Sambhar, coconut chutney.

2) Ragi dosa

Preparation time: 45 minutes

Ingredients: Ragi flour- 1 cup

Rice flour- 1 tsp

curd- 1/2 cup

Salt, oil- as per taste

Vegetables- as per requirement

Procedure: Take a bowl, add ragi flour, rice flour , curd and salt to it and mix well. Let it ferment for 30 minutes. Now tale a non-stick pan and pour it as a dosa and let it cook from both the sides. In this batter you can also add vegetables as per your taste.

Tastes best with chutney.

3) Besan oats cheela

Preparation time: 30 minutes

Ingredients: Besan- 1/2 cup

Oats- 1/2 cup

Carrot, capsicum, onion- 1 medium each ( chopped)

Salt, masalas and oil- as per requirement

Procedure: Take a bowl, add besan, oats to it and mix well into a batter. Add salt, required masalas to it and mix very well. Add the chopped vegetables to it and mix well. Now take a non- stick pan, pour the batter and let it cook well from both the sides.

Served best with any kind of green chutneys.

 

Porridges

1) Dal porridges

Preparation time- 30 minutes

Ingredients: Moong dal 4 tsp

Chana dal- 2 tsp

Badam, peants: 5-6 pieces,

Jaggery- 1 small piece

Milk- 1 glass ( hot)

Procedure: Dry roast the two dals, badam , peanuts and let them cool. Grind them into powder. Now boil 1 glass of milk and add the powder to it. You may add jaggery to it for taste. If not, you can have it without it also. Make sure the consistency is neither too thick nor too small.

2) Sabudana porridge

Preparation time- 30 minutes

Ingredients: Sabudana- 4 tsp

Hing- 1 pinch

Chaach- 75 ml,

Salt as per requirement

Procedure: Soak Sabudana for 20 minutes and then cook in in water till it boils well. After it cools down, add chaach and hing to it and drink it.

3) Ragi porridge

Preparation time: 10 minutes

Ingredients: Ragi flour- 4 tsp

Peanut and badam ( grind)- 1 tsp powder

Jaggery- as per requirement

Milk- 1 glass

Procedure: Dry roast the ragi flour and nuts flour. Now boil on glass of milk and and add the powder to it. You may add jaggery to it for taste.

 4) Khichdi

Preparation time- 45 minutes

Ingredients; Brown rice- 1 cup

Moong dal, without skin – 1/2 cup

Carror, Onion, Tomato Capsicum- 1 medium ( chopped) each

Ghee- 1/2 tsp ( 3 grams)- for garnishing

Oil- 1 tsp ( 5 grams) for cooking

Cashew, kishmish- 3-4 pieces

Water- 3 to 3 1/2 cups

Procedure: Dry roast rice and moong dal and keep it aside to cool down. Soak it in water for 20 minutes. Now, add the chopped vegetables, salt to it and pressure cook it well. Now take a small pan, add ghee and oil to it. add jeera, cashew and kishmish and saute till they are brown. Add it to the cooked khichdi and serve hot with chutney.

5) Oats porridge

Preparation time: 20 minutes

Ingredients: Oats- 1 cup

Potato- 1 small ( boiled)

Tomato- 1 small ( chopped)

Jeera, hing- 1 pinch

Oil and salt- as per taste

Procedure: Dry roast oats and keep it aside. Now take a pan and add oil to it. Add jeera and hing to it. Let it turn brown and then add chopped tomatoes and boiled potato ( mashed) to it. Add salt and cook it well. It tastes well with chutney.
